A distinctly delicious corned beef delight, snuggled in a light and fluffy egg wrap, drizzled with cheese.
INGREDIENTS:
- 1 can GRACE Corned Beef (Buy Now)

2 tbsps Vegetable Oil

1/4 cup Sweet peppers (finely diced)

1/4 cup Onions (finely diced)

1 sprig Thyme

2 stalks Escallion (finely chopped)

1/2 cup Grated mozzarella cheese
- 1/2 cup Pineapple Slices (cut in chunks)
- Egg Blanket Ingredients

8 large eggs

Salt and pepper to taste
- Cooking spray
DIRECTIONS:

Heat oil in a sauté pan and sauté half of the onion, sweet peppers, tomatoes, escallion and thyme until flavours are combined. Stir in corned beef and mix well.
- Add remaining seasonings and pineapple.
- Sprinkle on cheese and use as directed.

Beat Eggs until light and fluffy, add salt and pepper. Pour 1/4 of the beaten egg into a pan, then roll to coat the pan.
- As soon as the mixture appears dry and can be lifted, spoon 1/4 of the corned beef mixture into the centre.
- Fold the ends closest to you then the other side, then opposite of the one folded.
- Give a turn over until it is all wrapped around. Remove from pan to plate.
