Jamaican chicken and pumpkin soup is an excellent and tasty recipe. The combination of Caribbean flavors is a mouth watering fusion worthy of being repeated over and over again.
INGREDIENTS:

2Â Chicken Thighs (cubed)

1 Grace Chicken Flavoured Soup Mix

1 Grace Pumpkin Flavoured Soup Mix
-
1Â pack Maggi Season-Up Chicken Powered Seasoning
-
1Â tbsp Grace Caribbean Traditions Ginger Garlic Pimento Seasoning
-
6 Ocho Rios Pimento berries
-
¼ tsp Scotch Bonnet Pepper Sauce
- 2Â stalk escallion, chopped
- 2 cloves of crushed garlic
- ½ lb pumpkin or squash, peeled and cut in cubes

1 large sweet potato, peeled and cut in cubes
- 2Â sprig of thyme

1 chayote (Chocho), peeled and cut in cubes

1 corn, cut in 5 pieces
- 1 medium carrot, chopped

Salt to taste
-
4Â cups of water
Dumpling mixture

2 tbsp Grace Fine Enriched Yellow Cornmeal
-
1 cups all-purpose flour
-
¼ tsp salt
-
Water
DIRECTIONS:
Instruction for making dumplings

Add flour, cornmeal and salt to a medium bowl and mix well to evenly combine the dry ingredients.
- Add water gradually to form a dough.
- Divide dough into smaller pieces, and roll in the palm of your hands to form round flat dumplings. Set aside for soup.
Instruction for making chicken pumpkin soup

Add 4 cups water to a large pot and bring to a boil. Place chicken, garlic, thyme, escallion, pimento berries and scotch bonnet sauce into the pot. Allow to boiling for 7 minutes.

Begin to add the dumplings, pumpkin, sweet potato, chayote, corn and carrot to the pot. Allow the pot to continue cooking for an additional 10 minutes before seasoning the pot.

Add the chicken noodle soup mix, pumpkin soup mix, Maggi chicken seasoning, ginger garlic pimento seasoning to the pot. Add salt to taste if necessary.

Cover the pot and allow soup to cook for 45mintues, reducing the heat to a medium flame and stirring the pot occasionally.

Soup is ready when the vegetables are soft and tender and the soup as a thick, rich texture.

Serve in a bowl and enjoy.
