A classic corned beef recipe, using canned corned beef as it's done in the Caribbean. In under 20 minutes, you'll have a tasty spicy corned beef and rice dish.
INGREDIENTS:

1Â can Grace Corned Beef

4Â whole pimento berries

½ teaspoon Grace Scotch Bonnet Pepper Sauce
- 1Â stalk escallion, chopped
- 1Â cloves of garlic, crushed
- ½ small white onion, thinly sliced

1 medium tomato, diced
- 2Â sprig of thyme

¼ tsp black pepper

¼ cup vegetable oil
-
2Â tbsp ketchup
DIRECTIONS:

Heat vegetable oil in a non-stick pot over medium heat.

Sauté onions, escallion and garlic until they are soft and translucent.Add tomato, thyme and pimento berries and cook for 3 minutes.

Add ketchup and scotch bonnet pepper sauce to pot.

Open a can of corned beef and add to vegetable mixture with black pepper and cook for another 3 minutes.

Serve with a side of steamed rice.
