An authentic flavourful, protein rich stew starts with soya veggie chunks starts that have been seasoned and stewed with colourful vegetables for flavour.
INGREDIENTS:

1 Pack Plain Soya Vegan Chunks

1Â pack Maggi Season-Up All Purpose Powered seasoning

1Â pack Maggi Season-Up Chicken Powered Seasoning
-
1 tbsp Grace Browning
-
8oz Grace Classic Coconut Milk
-
5Â Ocho Rios Pimento berries, Crushed
-
1/2Â tsp Scotch Bonnet Pepper Sauce
- 2Â stalks escallion, chopped
- 2 cloves of garlic, crushed
- 1Â medium onion, chopped
- 1Â sprig of thyme

¼ Yellow Bell Pepper
-
¼ Green Bell Pepper
-
1 tbsp sugar
-
½ cup vegetable oil
-
2½ cups of water
- Salt to taste
DIRECTIONS:

In a medium bowl, add two cups water to cover the vegan chunks and allow to soak for 15 minutes.

Drain water and pat dry with paper towel to remove excess water.

Add browning, Maggi All Purpose Seasoning, Maggi Chicken Seasoning and mixed well.

Heat vegetable oil in a pot and add onion and garlic, stirring continuously to prevent burning.

Add the seasoned vegan chunks to the pot and stir-fry for 10 minutes.

Add chopped carrots, bell peppers, thyme, escallion, pimento berries and scotch bonnet pepper sauce, and stir well.

Add half cup water, sugar, coconut milk and salt if needed.

Reduce heat to medium, cover pot and allow to simmer for 15 minutes or until a liquid isreduced to a thick rich sauce.
