This is a popular Jamaican appetizer. Saltfish can be prepared the day before for a quicker cook time. These are also good served with a spicy dipping sauce.
INGREDIENTS:

1 bag Grace Seasoned Mix for Saltfish Fritters
- 1 medium tomato, diced
- 1 stalk escallion, chopped
- ¼ medium onion, chopped
- 1 ½ cup water
- 1 cup vegetable oil
DIRECTIONS:

Pour grace seasoned mix for saltfish fritters into a medium bowl.

Add tomato, escallion, onion and 1 ½ cups water to mixture andcombine thoroughly. Allow mixture to sit for 10 minutes before frying.
- In a large skillet heat vegetable oil.

Using a tablespoon or large spoon, pour batter into heated oil 1tablespoon at a time to form small individual fitters and fry until goldenbrown on one side, then turn and continue frying until the other side isalso golden brown.

Allow fritters to drain on absorbent paper towel to remove excess oil.

Serve hot.
